Bistrot La Minette’s Basque Dinner

The next stop on Chef Peter Woolsey’s culinary tour through France is to the Basque region, which features influences from both the Pyrenees and Spain. Enjoy traditional dishes like pipérade, prepared with peppers, onions, tomatoes and spices. Chef Woolsey’s Basque dinner will be available on Wednesday, April 21 and Thursday, April 22. The four-course prix fix meal is $35 per person, $50 with complimentary wines. Here is the menu:

Garbure
Basque stew, duck confit, cabbage, potatoes, turnips
Cabillaud Cuisiné Comme au Pays Basque
Pan roasted cod, white beans, pimento, sherry vinegar, olive oil
Poulet a la Basquaise
Oven roasted chicken, Basque pipérade
Gateau Basque
Pastry cream and confiture filled cake, vanilla ice cream
